An easy, yummy lunch!
Hi! It's been eons since my last blog post, hasn't it?! I've been a bit preoccupied...with my new job! I'm the new community manager for JewishBoston.com, a website for all things Jewish in Boston. (It's awesome and you should totally check it out.) It's been a really exciting summer of change for me! I'm still adjusting, especially to the fact that I no longer drive to work. I take the train downtown, and when I get a seat, I can read my book and everything is dandy. But when there's a Red Sox game or the train breaks down, I feel like a claustrophobic sardine just trying to make it home alive! Anyway, aside from my big news (!), I also want to share a yummy summer recipe that I tore from the pages of Glamour last year. Though it's billed as a workday lunch recipe, I went wild and made it on the weekend. (Note: It was husband-approved. And I skipped the chives because I didn't have any.) The next thing I want to tackle in the kitchen before summer is over: peach pie! Have you made it? If so, what's your favorite recipe?

Chickpea Salad in Crisp Lettuce Wraps (from Glamour)
Makes 6-8 wraps; salad keeps 2-3 days

Craig Koketsu, chef of New York City's Hurricane Club tiki bar, suggests eating this bean salad out of lettuce cups. That's gorgeous, but we ate it straight from the Tupperware and it tasted just as good! Do whatever works for you. [Kali's note: I've done both, and it's great either way!]

1 cup canned chickpeas, rinsed and drained
1 ripe avocado, roughly chopped
1 large tomato, chopped
3/4 tsp. ground cumin
1 tsp. Tabasco sauce
1/4 cup chopped cilantro
1 tbsp. chopped chives
1/2 tsp. salt
2 tbsp. extra-virgin olive oil
1/2 lemon, juiced
6-8 lettuce leaves, washed and dried (Bibb and red leaf work best)

In a large mixing bowl, combine all the ingredients and incorporate well. Pack lettuce separately; when ready to eat, spoon mixture onto the leaves.

 
 
Speaking of jewelry, I kind of love the way Kim Kardashian recently wore her boyfriend's initials as earrings (see below). (Yes, I'm a Kardashian fan, and no, I'm not ashamed to admit it!) As a newlywed (I'm still a newlywed, right?), I've been drawn to my new monogram in everything from home decor to jewelry. So when I came across these initial earrings, I decided to buy two sets of letters so I can wear my first and last initials together! (I happen to have two ear piercings in each ear, so I can pull a Kim or wear just one letter in each ear.) Usually I save a million items in my online shopping carts without buying anything, but since the earrings seemed pretty reasonably priced (with free shipping!), I thought I'd take a stab at channeling my inner Kardashian (albeit with my own initials instead of my husband's). Are you into the monogram jewelry look too?

Hi! How are you? I know I've been a delinquent blogger lately, but I'm trying to get myself back on track, I swear! I thought I'd start by sharing this adorable necklace—it's my first-ever purchase from the jewelry website BaubleBar (and with the amount of cute stuff they sell, I'm pretty sure it won't be my last!). I'm eagerly awaiting its arrival, and when it comes I plan on wearing it with my white summer dress! (I still love all things mint green.) Where do you buy your fun accessories?

Hi there! I know I haven't been blogging very much lately...I seem to be having a little case of writer's block! (Or should I say "blogger's block"?!) But I'm here to wish you a very sweet weekend nonetheless! Mr. Pink Think and I plan to go to the movies and spend some quality time outside enjoying the sun. Have fun, no matter what you plan to do! P.S. Isn't pink cotton candy just so much fun? This picture is from brunch at The Langham Boston's "chocolate bar," which I highly recommend!
 
 
Hey y'all! (I can say that because my husband is from North Carolina, right?) Anyway, I'm totally loving my new TOMS, which I bought over the weekend. As usual, they're super comfy and pretty much go with everything. I still think they're the best shoes ever! Have you tried them yet?

Want to see my current favorite piece of jewelry? It's this super dainty and super cute ampersand ring! My husband gave it to me for Hanukkah, and I've been wearing it constantly. We sort of have a thing for ampersands...the symbol definitely shows up more than once in our apartment. (More like six times or so!) I had been coveting the handmade gold alphabet rings from Catbird for a few years and was so thrilled to receive one. It's so special to have two really unique rings from my husband—one on each hand! (P.S. Here's my left hand.)
 
 
Good morning! It seems I've been on a once-a-week posting schedule lately...I guess sometimes life just gets in the way of blogging! It's hard to believe that it's almost the end of April (and that I've been married for six months already!). I'm so ready for spring and summer, aren't you? This year my husband and I decided to make a list of all the things we hope to do this summer, like go on an overnight beach trip and make fresh lemonade in our kitchen. Last year we were so busy with wedding plans that sometimes we forgot to enjoy the season! We also decided to stay in our apartment for another year to avoid moving this summer, so we've been adding a few little things to keep it fun and fresh. I've actually got my eye on this clever glass bowl—we always keep a dish of M&Ms in our living room, and I love how this bowl looks like a plastic baggie! (My husband and I like to say we "love things that look like other things!") What are some ways you plan to celebrate this sunny season?

Hi there! Over the weekend I was inspired to make my own granola to jazz up my daily yogurt. I followed this recipe, which turned out great—yummy, crunchy and not too sweet! I've been sprinkling it on my Greek yogurt for a really satisfying breakfast. If you love granola, it's definitely worth making!
 
 
Hey there! Just stopping by to say hello. The past week has been busy with a lovely trip to Charlotte, N.C., to celebrate Passover with my husband's family. (Bonus: The weather was beautiful!)
